It is SOOOOO cold out today & we started the morning up here north of Toronto with icy rain and snow. Yuck! It has caused more than a few delays in my day – including getting today’s Give up for all of you to enjoy.

Since it’s so icy cold outside, I thought it would be a perfect time to share a delicious recipe straight from The Start Here Diet. Anybody up for a little Apple Cinnamon Oatmeal?

Apple Cinnamon Oatmeal
From: The Start Here Diet by Tosca Reno
Servings: 3 cups; 2 1.5 cup servings or 3 1-cup servings
Prep Time: 10 minutes
Cook Time: 10 minutes
1 Tbsp organic, unsalted butter
1 apple, cut into 1/2″ chunks
1/2 tsp cinnamon
1 cup old-fashioned oats
1 3/4 cups water
Pinch of sea salt
1 Tbsp brown sugar (or step up to maple syrup or honey)
1 Tbsp sliced almonds or chopped walnts (optional)
1 cup milk of your choice
In a small pot over moderate heat, melt the butter and add the apple. Cook until softened and golden brown, stirring occasionally, about 5 minutes. Stir in the cinnamon to coat. Add the oats, water, and salt. Bring to a simmer and cook for 5 minutes. If the oatmeal gets too thick, add a little more water. Remove from heat, cover, and let stand for 3 minutes. Uncover & stir in the brown sugar. Divide amongst bowls, top with almonds or walnuts, and pour in the milk. Eat warm.
